Authentic Italian Dishes Made with Monterey’s Best Seafood

Although Italian cuisine’s shining stars are pasta and pizza, it has a lot more variety than you might think. Traditional Italian dishes use many other tasty ingredients, including different kinds of seafood. Cafe Fina’s own founder, Dominic Mercurio, uses family recipes handed down from generation to generation, and we make sure to stay true to our roots. Here at our restaurant, we serve authentic Italian food using only the best seafood Monterey waters have to offer.

Seafood Pastas

Our specialty, Pasta Fina, is a classic Italian dish. We use fresh baby shrimp caught in the Bay and serve it up on linguini. We also use roma tomatoes, black olives, green onions, and shallots harvested seasonally right from our own garden. To top it all off, we add a rich clam butter sauce. We also have fresh cherrystone clams over linguini served with butter and white wine sauce; seafood based pastas call for white wine to get the authentic Italian taste just right.

Seafood Cioppino

At the top of our locals’ list of favorite seafood pasta is our famous Seafood Cioppino. Made with clams, mussels, calamari, fresh fish, and prawns all served on linguini, this dish is a must try. As one of the foremost seafood restaurants in Monterey, we get the ingredients fresh from the Bay and straight to the kitchen. After cooking onion, celery, and garlic, we add our freshly made tomato saffron broth. We don’t use too much onion or garlic, however, so as to preserve the signature taste of Italian cuisine (which does not use too much of these); one or two cloves of garlic and just a tiny bit of onion is enough.

Seafood Ravioli

Ravioli is a traditional Italian recipe, with the earliest known mention of the dish appearing in writing that dates from the 14th century. The filling used for ravioli may differ based on the place it was made, but perhaps the most popular is a combination of shrimp and crab. This blend, topped with a light pesto sauce (another trademark of Italian cuisine), makes for a hearty meal.
