Cafe Fina is one of the few restaurants in Monterey that promotes sustainability through the choice of ingredients. Whether it’s seafood or fresh produce, we make sure that they are harvested only through the most environmentally-friendly and sustainable methods.
To further this cause, Cafe Fina’s founder Dominic Mercurio sought to use as many seasonal and organic vegetables in our dishes all grown right here at his very own garden. We yield a fine selection of vegetables throughout the year. Right now, our Padron peppers and heirloom tomatoes are in full bloom.
Vegetables are an important part of a healthy diet. However, since the 20th century, local food sources have disappeared and made way for more processed foods. Restaurants began to realize the need for tastier, fresher, and healthier vegetables in their food which started a revolutionary farm-to-table movement. Cafe Fina is a proud advocate of local-grown, organic, and seasonal vegetables which we use to make some of our signature dishes.
Padron peppers are a variety of chili peppers and members of the Capsicum family of Americas which has some of the hottest peppers in the world such as Habanero and Ghost. Padron peppers actually have a higher levels of heat and spiciness so they are harvested while still immature. These peppers have a savory and piquant flavor that is mildly hot. We’re now serving pan roasted Padron peppers sauteed in olive oil and seasoned with sea salt.
Heirloom tomatoes are open-pollinated varieties of tomatoes that have been passed down through several generations and have been in production for decades. These tomatoes are rich in nutrients, vitamins, and minerals. They also have a richer flavor compared to the tomatoes usually found in supermarkets. Cafe Fina makes heirloom tomato caprese daily with our own home grown tomatoes, fresh mozzarella cheese, anchovy, and fresh basil topped with virgin olive oil and balsamic vinegar.
